The 2016 vintage of our Graduate Cabernet Sauvignon is all estate-grown and is a gorgeous dark red hue. The nose is immediately reminiscent of a warm chocolate chip cookie, as notes of vanilla, cocoa, and butterscotch take the front seat. Allow it a minute to breathe and you’ll soon find the Graduate full of aromas of dark fruit, dried tea leaves, and myriad herbs and spices. On the palate, flavors of dark berry jam, coconut, caramel, black pepper, and baking spices take the lead, with great acidity. The tannins are bold, but elegant, and the finish lingers. Pair this wine with duck in a balsamic reduction, molé short ribs, rack of lamb in a blackberry sauce, or prosciutto-wrapped dates.
