Each vintage of Cabernet Sauvignon from our estate property has a little something different to offer. Mother Nature blesses us with fabulous growing seasons and then tries our skills with more difficult growing seasons. The idea behind Timeless is to capture the greatness from each vintage and allow for that to shine through in a multi-vintage wine. Enjoy this blend of 2017, 2018, and 2019 Cabernet Sauvignon. We bottled this wine in August of 2021 and bottle aged for an additional 6 months. Our Timeless Cabernet is dark burgundy red. A rustic wine with a bouquet of cherry, blackberry, vanilla, and chanterelle mushrooms. Hints of black pepper and vanilla linger with cassis and sweet night jasmine. The palate is complex with plum, tobacco leaf, and spiced nutmeg married with the dark fruit notes of blackberry and cherry. The finish is long with dark roasted coffee notes. This wine pairs nicely with steamed dumplings with a ginger hoisin sauce, grilled chicken with a black mole sauce, or roasted duck.
